Over 100 students from IBTE School of Hospitality and Tourism will be taking part in the Brunei Gastronomy Week at the Longhouse Training Restaurant.

According to Cikgu Azlan Zaizy Hj Jaini, the students have been anticipating the event and worked together to create dishes for the menu since earlier in the year.

Last year, Brunei Gastronomy Week highlighted food wrapped in banana leaves which elevated normal dishes such as pais daging. The Longhouse Training Restaurant hosted a set menu that showcases various fusion dishes in accordance with the theme such as ikan liking in banana leaf and banana leaf batik cake.

With the theme this year being turmeric, the students of the School of Hospitality and Tourism have created a set lunch menu that is revolves around the key ingredient. Some of the dishes that have made it to the menu are ayam masak lemak kedayan, cream of carrot soup with turmeric oil and cheesecake with macadamia nuts and roasted turmeric, among others.

“The students made use of the training kitchen that is provided by the school to experiment and try new recipes for the event, and of course with the guidance from our instructors,” said Cikgu Azlan.

Fakhriah Haji Yakop, a student at IBTE School of Hospitality and Tourism, said that in preparation of the Brunei Gastronomy Week, they have created a new recipe and modernised the way the dish is presented or cooked.

Besides the Brunei Gastronomy Week, the student-run restaurant is currently operating and features a different theme every week, such as Middle Eastern, Spanish and Italian. The students in the school are given the freedom to come up with interesting dishes that fit the theme of the week – in a way challenging themselves to be innovative with traditional recipes.

“In the future, I hope the students can come up with more unique menus that can keep the traditional taste of our culture alive with an added touch of modern plating techniques,” said Cikgu Azlan.

The Bruneian set menu for Brunei Gastronomy Week will start from 25th February 2019 until 2nd March 2019 at the Longhouse Training Restaurant, located at IBTE Sultan Saiful Rijal Campus. The opening hours of the restaurant will be from 11.00am to 1.30pm.
